Sweet Potato Recipe

This is a wonderful sweet potato recipe. It is the perfect alternative to mashed potatoes when you are in the mood for something a little sweeter. Serve this at Thanksgiving and your family will be begging for more.

Maple Whipped Sweet Potatoes

Ingredients:

  • 6 lbs. sweet potatoes, peeled and cut into 2 inch pieces
  • 6 cups apple cider
  • 4 cups water
  • 1 stick unsalted butter
  • 2/3 cup maple syrup
  • salt, to taste

Directions:

In a large pot, over medium-high heat, combine sweet potatoes, cider and water. Bring to a boil. Reduce heat and simmer 30-35 minutes or until sweet potatoes are fork tender. Drain well.

In the same pot bring the butter and maple syrup to a boil. Add the potatoes and toss. Season with salt, to taste.

Whip the potatoes with a mixer or in a food processor. Return to pot to keep warm until ready to serve or place into a buttered baking dish to refrigerate overnight. To reheat the next day, place the casserole in a 350 degree oven for 30 minutes.
