Strawberry Spinach Salad Recipe

This strawberry spinach salad recipe is a very light and refreshing salad. It is perfect for Summer when fresh strawberries are at their peak.

In the Winter, if you want to give yourself a reminder of what Summer time tastes like, make this salad with thawed and drained frozen strawberries, or just make the dressing and use it on your favorite salad mix for a change of pace.

Strawberry Spinach Salad

Ingredients:

  • 1 bag fresh baby spinach leaves, washed
  • 1 small red onion, finely diced
  • ½ cup slivered almonds
  • 2 cups fresh strawberries, sliced
  • 2 Tblsp. balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 tsp. sugar
  • ¼ tsp. pepper

Directions:

For dressing, puree 1 cup of strawberries in a blender or food processor until smooth. Add balsamic vinegar, sugar and pepper and blend. Slowly stream in olive oil until well combined. Refrigerate until ready to use.

In a salad bowl, combine spinach, remaining sliced strawberries, red onion and slivered almonds. Toss with dressing just before serving.
