Split Pea Soup Recipe

I remember my mother making this split pea soup recipe when I was a child. I can see, clear as day, the glass jar containing the dried split peas that used to sit on our kitchen counter. Split pea soup is one of those tastes that will always bring me back to my childhood. I hope you enjoy this soup as much as I do.

Split Pea Soup

Ingredients:

  • 1 large onion chopped
  • 3 Tblsp oil (any kind)
  • 1½ cups dry split peas
  • a pinch of salt
  • 1½ -2 cups cubed ham
  • 1 potato - cubed
  • 1 carrot shredded with a vegetable peeler
  • 6 cups water or low salt chicken broth or half of each
  • 6 whole peppercorns
  • 1 bay leaf
  • Lawry's season salt to taste

Directions:

In a soup pot, saute the onion in oil until translucent. Add water or broth. Rinse and drain peas and add them to the soup with a pinch of salt. Add remaining ingredients and bring to a boil. Reduce heat and let simmer until peas break down to a creamy consistency and potatoes are soft. Remove bay leaf and peppercorns. This soup is even better the next day, but if it gets too thick you can thin it with water or chicken broth.
