Smoked Salmon Appetizer Recipe
To me, this smoked salmon appetizer recipe is like a combination of the classic bagels and lox and sushi - two of my favorites. You have the cream cheese and salmon combination as well as the classic crunch from the cucumber that you will find in many sushi rolls. It is light and refreshing and a perfect appetizer for any occasion.
Smoked Salmon on Cucumbers
Ingredients:
- 1 8oz. pkg. cream cheese, at room temperature
- 12 oz. smoked salmon
- 2 Tblsp. lemon juice
- ½ tsp. dill seeds
- 1 jar pimentos
- Salt & pepper, to taste
- 1 seedless cucumber
Directions:
Place cream cheese in a mixer bowl and beat until smooth. Add salmon, lemon juice, dill, salt and pepper and mix until well combined.
Slice the cucumber into 1/2 inch rounds. (Because there is no wax on the skin of a seedless cucumber, you can leave the skin on. If you want to make the rounds look slightly more fancy peel small strips of the skin off so that you have stripes of light and dark green around the border of each appetizer).
Place a spoonful of the salmon mixture on each cucumber round and garnish with a few pieces of pimento.
