Salmon Pasta Recipe
This quick simple and delicious salmon pasta recipe will have your guests feeling like they are dining in Italy for the evening. This elegant dish can be ready in less than 15 minutes. Since there is no sauce, this is actually a light and refreshing pasta meal. Add a salad and a loaf of crusty Italian bread and you have a fabulous meal you will be proud to serve.
Salmon Pasta
Ingredients:
- 1 lb. egg noodles
- 6 Tblsp. extra virgin olive oil
- 1 cup diced, seeded tomato
- ¼ cup fresh dill, chopped
- 8 oz. smoked salmon, chopped
- salt & pepper, to taste
Directions:
Cook noodles according to package directions. Drain and reserve 1 cup of the cooking liquid. Do not rinse the noodles.
Put the noodles in a large bowl, add extra virgin olive oil and toss to coat. Add remaining ingredients and toss.
The heat from the pasta will warm through the salmon. Add the reserved cooking liquid a little bit at a time until you have achieved a consistency that you like. Season with salt & pepper to taste and transfer to a serving bowl.
