Raspberry Blue Cheese Salad

I started making this salad recipe when I had it in a restaurant. I liked it so much that I decided to try to replicate it at home. This is the version that I like.

This is a very versatile salad. Use the amounts for each ingredient provided as a guideline. Add as much or as little of each ingredient as you like.

You can even substitute thinly sliced pears or green apples for the dried cranberries. Use your favorite store bought raspberry vinaigrette dressing and you are good to go.

Raspberry Blue Cheese Salad

Ingredients:

  • 1 bag of mixed baby greens
  • ½ cup blue cheese crumbles
  • ½ cup crushed walnuts
  • ½ cup dried cranberries
  • raspberry vinaigrette dressing

Directions:

In a salad bowl toss all ingredients together. Don't overdo it on the dressing. Raspberry vinaigrette can be strong in flavor. Start with a little and add more if you feel it is needed. You only need enough dressing to coat the salad greens.

If you are preparing this salad ahead of time, combine all ingredients except the dressing and refrigerate. Add the dressing and toss just before serving.
