Roasted Asparagus

This is one of my favorite side dishes. It is best prepared in Spring when this tender veggie is at its freshest.

Simple is best when it comes to preparing fresh vegetables and this recipe is the perfect blend of simple and delicious.

Roasted Asparagus

Ingredients:

  • 1 pound medium-thickness fresh asparagus spears
  • extra virgin olive oil
  • salt & pepper
  • freshly grated Parmesan cheese

Directions:

Preheat oven to 350°.

Snap the tough ends off of the asparagus spears and line them in a baking dish. Drizzle them lightly with extra virgin olive oil and season with salt and pepper. Toss to coat. Arrange the asparagus in a single layer. Bake for 15 to 20 minutes and sprinkle with freshly grated Parmesan cheese immediately after removing them from the oven.
