Salmon Quiche Recipe
This quiche recipe is perfect to make when serving brunch for guests. It is light and flaky and the combination of flavors in this recipe is absolutely delicious.
If you prefer to make your own pie crust feel free, but it is just as good and much less work to use a frozen crust straight from the grocery store.
Salmon Quiche
Ingredients:
- 1 frozen pie crust, thawed
- 3 eggs
- 2 cups half & half
- 8 oz smoked salmon, flaked
- 4 oz sharp cheddar cheese
- 1 jar pimentos, drained
- ½ cup chives, chopped
- salt & pepper, to taste
Directions:
Preheat oven to 350°.
Place one sheet of pie crust into a quiche pan (or a regular sized pie plate) and fold under the edges.
In a bowl, gently beat eggs with half & half. Add remaining ingredients and stir to combine. Pour mixture into pie crust. Bake for 35 to 45 minutes. The center will be a little soft. Allow to rest and firm up for 15 minutes before serving.
Slice and serve just as you would a pie.
