Potato Skins Recipe
This potato skins recipe will prove that this is one appetizer that does not have to be limited to your favorite sports bar. These easy, cheesy and delicious recipe will satisfy a crowd right in your own kitchen.
Cheesy Potato Skins
Ingredients:
- 12 baking potatoes, scrubbed
- ½ cup butter, melted
- garlic salt, to taste
- 2 cups shredded cheddar cheese
- 2 cups of your favorite salsa
Directions:
Preheat the oven to 425°.
Prick the potatoes several times with a fork and place them directly on the oven rack for 40 to 50 minutes or until they are tender. Cut the potatoes into fourths, lengthwise. Scrap the meat from the potatoes until the skins are ½ inch thick.
Brush both sides of each potato skin with melted butter and place them, skin side down, on a baking sheet. Bake (still at 425°) for 15 minutes. Sprinkle with garlic salt and top with shredded cheddar. Return the potato skins to the oven for about 2 minutes or until the cheese is melted.
Arrange the potato skins on a platter and pour the salsa into a pile in the center.
