Potato Pancake Recipe

I celebrated both Christmas and Hanukkah as a child and I have very fond memories of my Grandfather making this potato pancake recipe every year. In the Jewish community potato pancakes are known as potato latkes. Whatever you call them, they are delicious!

You can make this potato latke recipe for breakfast or serve it as a side dish to your favorite meal. Serve them with sour cream or apple sauce. You can easily multiply this recipe to make as many as you need.

Potato Pancakes

Ingredients:

  • 1 lb. russet potatoes
  • 1 medium onion, finely diced
  • 1 egg, lightly beaten
  • ½ tsp. Kosher salt
  • vegetable oil

Directions:

Peel the potatoes and then grate them using a large grater or food processor. Soak the grated potatoes in cold water to remove some of the starch. Drain and squeeze out as much liquid as possible.

In a mixing bowl, combine the grated potatoes with the onion, egg and salt. Form into approximately 12 patties.

Coat the bottom of a large, non-stick skillet with vegetable oil and heat until very hot. Add the potato latkes, a few at a time, and cook for approximately 4 minutes per side, until golden brown. Remove to paper towels to drain.
