Polenta Recipe

This first time I made this polenta recipe I prepared 1 Cornish hen for each person I was entertaining and served the hens on a bed of gorgonzola polenta with some caramelized onions. It was one of the most delicious meals I have ever had. This polenta is so easy to make you can serve it with your favorite meal any night of the week.

Creamy Gorgonzola Polenta

Ingredients:

  • 6 cups water
  • 1¾ cups yellow cornmeal
  • 3 Tblsp. unsalted butter
  • ¾ cup heavy cream
  • 3 oz. gorgonzola
  • salt & pepper, to taste

Directions:

In a large pot, over medium heat, bring the water to a boil. Add a pinch of salt and the cornmeal, whisking constantly. Reduce heat to low and cook for 15 minutes, whisking often. Remove pot from heat. Add butter, cream and gorgonzola. Whisk until the cheese melts and the polenta is smooth and creamy. Season with salt & pepper.

Serve on the side or as a bed for your main course.
