Pineapple Salsa

This no-cook salsa is the perfect accompaniment to any pork dish. It is best made at least one day ahead to provide time for the flavors to really meld together while the salsa chills.

Pineapple Salsa

Ingredients:

  • 15 oz. can crushed pineapples
  • 10 oz. jar apricot all fruit preserves
  • 3 Tblsp. dry mustard powder
  • 2 Tblsp. prepared horseradish
  • 1 tsp. freshly ground black pepper

Directions:

In a medium bowl, combine all ingredients. Start very slowly with the horseradish, adding 1 tsp. at a time and as much as 2 Tblsp., depending on your taste. Taste as you go. When you have added enough horseradish to suit your tastes, mix well and chill until ready to serve.
