Ham and Cheese Muffin Recipe
This muffin recipe beats those sandwiches you can get at a fast food drive through, hands-down. They are light, fluffy and delicious.
Ham and Cheese Muffins
Ingredients:
- 2 eggs
- 3 cups Original Bisquick
- 1 cup milk
- 3 Tblsp. vegetable oil
- 1 cup shredded cheddar cheese
- ¾ cup fully cooked chopped ham
Directions:
Preheat oven to 400°. Spray a regular muffin pan with non-stick spray.
In a bowl, beat eggs slightly and stir in Bisquick, milk and oil until just moistened. Stir in 3/4 of the cheese and all of the ham. Divide batter evenly among 12 muffin cups. Sprinkle remaining cheese over the top of each muffin.
Bake 18-20 minutes. Remove the muffins immediately from the pan and let cool slightly.
