Chicken Potato Patties
These tasty patties make a great leftover chicken recipe. They are the perfect thing to make the day after a big roast chicken and mashed potatoes dinner. Add a few fresh ingredients and you have yourself another meal.
You'll like this one so much you will want to make it even without the leftovers. You can do that by using packaged mashed potatoes straight from the grocery store and a can of chicken.
Either way they are quick, easy and delicious so go ahead and give them a try.
Chicken Potato Patties
Ingredients:
- leftover mashed potatoes
- 1 egg
- 2-3 Tblsp. milk
- 2 green onions, chopped
- ¼ cup grated Parmesan cheese
- 2 cups leftover chicken or 1 large can chicken (found near the tuna in your grocery store)
- butter-flavored crackers, crushed
Directions:
Mix all ingredients except crackers. Form into patties and roll in cracker crumbs (substitute wheat germ for crackers to make a healthier version).
Bake at 350° for about 15 minutes and then place under broiler until outsides are golden brown.
Serve these with a fresh green salad for a perfect meal.
