Leftover Beef Recipe
Open Face Roast Beef Sandwiches

This is a fabulous leftover beef recipe. Perfect for the night after a big roast beef and mashed potatoes Sunday dinner, but you can still make it without the leftovers. All you need is a package of roast beef with gravy and a package of ready made mashed potatoes - both are available right at your local grocery store.

Open Face Roast Beef Sandwiches

Ingredients:

  • Leftover roast beef, or one package of ready made roast beef with gravy
  • Two slices of bread per person
  • Leftover mashed potatoes or prepackaged mashed potatoes
  • Leftover gravy or 1 jar of store bought gravy (you don't need the gravy if you are using packaged roast beef with its own gravy)

Directions:

Reheat your leftover roast beef and mashed potatoes (or prepare them according to the package directions).

Place two slices of bread, side by side, on each plate. Place several slices of roast beef to entirely cover the bread. Place mashed potatoes on top of roast beef, making a well in the center and pour in the gravy.
