Grilled Pineapple
This grilled pineapple recipe is so delicious and easy to make you will want it every night. It is light but has just enough sweetness from the fresh pineapple, making it the perfect Summer dessert. Once you taste it, though, you will be craving it all throughout the year.
Maple Pineapple Rings
Ingredients:
- 1 fresh pineapple
- ¼ cup maple syrup
- vanilla ice cream
- ½ cup chopped walnuts
Directions:
Preheat your grill on a medium flame.
Cut the top and bottom off of the pineapple. Stand the pineapple on one end and cut the off starting at the top and cutting down. Continue to rotate the pineapple until all of the peel has been removed. Lay the pineapple on its side and cut it into 8 rings. Remove the center core from each ring (a spoon or apple corer work really well for this).
Place the pineapple rings in a large mixing bowl and pour the maple syrup over them. Gently toss to make sure each pineapple ring is coated with syrup.
Place the pineapple rings on the grill and cook 2 to 3 minutes per side, turning only once.
While the pineapples are grilling, place the walnuts in single layer into a dry saute pan. Toast the walnuts over medium heat, stirring often, until you can begin to smell them (about 10 minutes). Be very careful not to burn them.
Place the pineapple rings onto a large serving platter. Place a scoop of vanilla ice cream on the center of each ring and top with toasted walnuts. Serve and enjoy!
