Gorgonzola Sauce
This rich and creamy sauce is sinfully delicious and sinfully simple to prepare. It is the perfect accompaniment for a fancy meal without a lot of fuss.
Just watch the cream carefully while it is boiling because it can very quickly boil over. If the cream starts to get a little high in the pot, lower the heat a little until the cream settles down and then gradually raise the heat back up to keep the cream bubbling away.
Once the cream has thickened, the sauce goes together in seconds.
This gorgonzola sauce recipe is perfect when prepared with Beef Tenderloin, but it is equally delicious poured over oven roasted tomatoes, asparagus or potato wedges.
Gorgonzola Cream Sauce
Ingredients:
- 4 cups heavy cream
- 4 oz. gorgonzola
- salt & pepper to taste
- 2 Tblsp. finely chopped fresh parsley
Directions:
In a medium pot, bring the heavy cream to a rolling boil over medium-high heat. Let the cream continue to boil for 45 minutes, stirring occasionally, until it gets very thick.
Remove the pot from the heat and add remaining ingredients, stirring until the cheese has melted.
