Fruit Pizza Recipe
This fruit pizza recipe is a great dessert for the Summer months when fresh fruit is abundant. Use any combination of fruit that you like. You could even make individual sized crusts ahead of time, then let your guests make their own pizzas from a selection of fruits you have prepared in advance.
Fruit Pizza
Ingredients:
- 1 pkg. ready made sugar cookie dough
- 8 oz. cream cheese, at room temperature
- 1 tsp. vanilla extract
- ½ cup sugar
- assorted fruits, sliced
- ½ cup apricot preserves
- 1 Tblsp. water
Directions:
Preheat the oven to 350°.
Slice cookie dough into 1/8 inch rounds and place close together on a pizza pan. Bake for 10 minutes. Dough will come together to form one "pizza crust." Another option would be to roll the dough, but I find cutting it easier.
While the crust is cooling, combine the cream cheese, vanilla extract and sugar in a bowl. Spread the cream cheese mixture over the crust. Arrange fruit slices on top of the cream cheese mixture.
In a small pot, heat the apricot preserves and water while stirring to create a glaze. Brush the glaze over the fruit slices. Refrigerate the pizza until you are ready to serve.
