Egg Recipe

This egg recipe is my Scottish father's version of egg salad. I am not sure that this is the official name, but he calls it chuckly eggs.

Instead of eating it for lunch, he makes it for breakfast and eats it on buttered toast with lots of pepper. He uses more butter than mayonnaise and only adds enough mayonnaise to make it the right consistency, but the butter adds great flavor. It is absolutely delicious.

Chuckly Eggs

Ingredients:

  • 4 hard boiled eggs
  • salt & pepper, to taste
  • 2-3 Tblsp. mayonnaise, or to taste
  • 4 slices of bread, toasted
  • additional butter to spread on toast

Directions:

Peel the hard boiled eggs, roughly chop them and place them in a bowl. Add salt, pepper, and mayonnaise and mash together. Add the mayonnaise slowly. The mixture should not be quite as moist as egg salad (it should be stodgy, as my Scottish father would say). Serve on buttered toast and enjoy.
