Black Bean Chili Crock Pot Recipe
This crock pot recipe is easy to make, full of flavor and with the addition of the pork it is hearty enough to please even the meat and potatoes fans in your life.
Pork tenderloin can be a bit expensive. This recipe has become such a staple in my house that I watch for the tenderloin to go on sale. When I get it home I cut it in half, use one half for the recipe and freeze the other half for the next time I make this dish.
Black Bean Chili
Ingredients:
- 1 lb. pork tenderloin, cut into 1 inch pieces
- 16 oz. jar of thick & chunky salsa
- 3 cans (15 oz.) black beans, drained and rinsed
- ½ cup chicken broth
- 1 red bell pepper, chopped
- 1 onion, chopped
- 1 tsp. ground cumin
- 3 tsp. chili powder
- 1 tsp. dried oregano
- ¼ cup sour cream
Directions:
Combine all ingredients except sour cream in crock pot. Cook on low heat for 8 hours. Serve with sour cream and enjoy!
