Corn Bread Recipe

This corn bread recipe is one of my husband's favorites. It definitely takes corn bread to the next level and it is the perfect compliment to your favorite chili or beef stew. Serve this kind of meal when you have a house full of guys watching football and you will be the MVP.

If you like things a little on the spicy side you can substitute pepper jack cheese for the Monterey jack and kick it up a little further.

This side dish can be on the table in under 20 minutes so go ahead and give it a try. You will never look at corn bread the same way again.

Kicked Up Corn Bread

Ingredients:

  • 1 box Jiffy corn bread mix
  • ½ lb. Monterey jack cheese cut into fine dice
  • ½ cup frozen corn kernels
  • 1 green onion, minced

Directions:

Preheat oven to 400°.

Combine all ingredients in a bowl, mix well and pour into a greased 8 X 8 inch casserole dish. Bake for 15 minutes or until golden brown. Let cool slightly before slicing and serving. Enjoy!
