Chicken Cacciatore Recipe
When you bite into this chicken cacciatore recipe will you think an Italian grandmother spent all day in the kitchen preparing it. Well, think of your crock pot as an Italian grandma because with this recipe, you get all day cooked flavor without any of the work. Just spend five minutes tossing it all together and forget about it until your house is filled with the wonderful aroma that says it's time to eat.
Chicken Cacciatore
Ingredients:
- 1 large onion, sliced thin
- 1½ lbs. boneless skinless chicken breasts
- 2, 6 oz. cans tomato paste
- 8 oz. fresh sliced mushrooms
- salt & pepper, to taste
- 2 garlic cloves, minced
- 2 tsp. Italian seasoning
- 1 bay leaf
- ¼ cup dry white wine
- ¼ cup water
- ½ to 1 lb. of your favorite pasta
Directions:
Place the thinly sliced onion in the bottom of the crock pot. Place chicken on top of onion. Combine all remaining ingredients and whisk to combine well. Pour over chicken and onions. Cook on low heat for 7 to 9 hours. Just before serving cook pasta according to package directions. Serve the chicken and sauce over your favorite kind of pasta. Top with some freshly grated Parmesan cheese and maybe some chopped fresh basil leaves and enjoy!
