Cheese Fondue Recipe

This cheese fondue recipe is an absolute must try! You can serve cheese fondue with just about anything you can think of for dipping, including asparagus, broccoli, mushrooms, pretzels, bread - anything you would want to dip in cheese.

For a slightly more filling option that would be good as a buffet item rather than an appetizer try serving this fondue with boiled fingerling potatoes (those small, skinny potatoes that look like fingers). They are perfect for dipping because of their shape and it tastes like you are eating a cheesy baked potato.

Cheese Fondue

Ingredients:

  • 1 Tbsp. extra virgin olive oil
  • 1 shallot, finely chopped
  • 1/4 cup dry sherry
  • 1 cup half and half
  • 8 oz. cream cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup freshly grated Gruyere cheese (if you cannot find Gruyere use Swiss)
  • 1 tsp. lemon juice
  • 1/2 tsp. nutmeg
  • 1/2 tsp freshly cracked black pepper

Directions:

In a heavy saucepan heat the oil over medium heat. Add the shallots and saute for 3 minutes. Add the sherry and cook for 2 minutes, until the sherry evaporates. Add half and half and reduce the heat to low. Add cream cheese and stir as the cheese melts, cooking approximately 5 minutes. Add Parmesan and Gruyere and stir until melted. Add lemon juice, nutmeg and pepper.

Transfer to a fondue pot or a small crock pot to keep warm. This one will have your guests coming back for more!
