Cheddar Cheese Soup Recipe
Being the cheese lover that I am, this cheddar cheese soup recipe is one of my favorites. It is so creamy and delicious - perfect for lunch or served with a nice big sandwich for dinner. You could even spice this up a bit with some hot sauce, if you like. Serve with crusty bread and an ice cold beer at a football game party. This soup is hearty enough that even the guys will go for it.
Cheddar Cheese Soup
Ingredients:
- 3 Tblsp. butter
- 1 yellow onion, finely chopped
- 3 green onions, finely chopped
- 1 celery stalk, finely chopped
- 3 Tblsp. flour
- 2 cups chicken broth
- 1 quart milk
- 2½ cups shredded cheddar cheese
- 1/8 tsp. nutmeg
- 1 Tblsp. Worcestershire sauce
- salt & pepper, to taste
Directions:
In a soup pot, over medium heat, melt the butter. Add the yellow onion, green onion and celery and cook for 2 minutes. Sprinkle the flour over the veggies and stir constantly for another 2 minutes. Add the chicken broth and bring to a boil. Reduce heat and simmer for 5 minutes. Add the milk and bring to a boil. Once the soup has come to a boil, add the cheese and stir until melted. Add all remaining ingredients.
