Caprese Bruschetta Recipe

This easy caprese bruschetta recipe is a twist on the traditional Italian caprese salad. Fresh tomatoes, mozzarella and sweet basil are classic Italian flavors and this bruschetta will pull those flavors together in an easy to bite appetizer.

Caprese Bruschetta

Ingredients:

  • 1 loaf, fresh Italian bread
  • Extra virgin olive oil
  • 3-4 fresh roma tomatoes
  • 1 lb. fresh mozzarella cheese
  • Fresh basil leaves
  • Salt & pepper, to taste

Directions:

Preheat oven to 350 degrees.

Slice the bread on an angle into 1/2 inch thick slices. Brush both sides of each bread slice with olive oil and place on a cookie sheet. Bake for 3-5 minutes, turning once to get both sides golden brown and toasted.

Slice the tomatoes lengthwise to fit the bread. Slice the cheese into slices the same size as the bread and tomato slices. Place one tomato slice on each piece of bread. Follow with one basil leaf and one slice of cheese.

Arrange the bruschetta on a serving platter. Drizzle extra virgin olive oil over the top of all slices and sprinkle with salt and pepper.
