Breakfast Burrito Recipe
This breakfast burrito recipe is simple and delicious with a slightly Mexican flair. If you are looking for an alternative to ordinary scrambled eggs, give this a try for breakfast.
Breakfast Burritos
Ingredients:
- 8 eggs
- 2 Tblsp. milk
- 1 Tblsp. butter
- 2 cups shredded Monterey jack cheese
- 1 tomato, seeded and finely chopped
- ¼ cup fresh cilantro, chopped
- 8, 6-inch flour tortillas
- 1½ cups salsa
- 2 avocados, chopped
- ¼ cup sour cream
- 1, 4 oz can chopped green chilies
- ¼ tsp. salt
Directions:
Preheat oven to 350 degrees. Spray a 9 X 13 casserole dish with nonstick spray.
In a large bowl, whisk eggs and milk. In a large skillet, melt butter. Add eggs and cook while stirring for 5 minutes. Remove from heat and add tomatoes, cheese and cilantro. Stir to combine.
Divide the egg mixture evenly onto the center of each flour tortilla. Roll the tortillas and place, seam side down, in the casserole dish. Cover tortillas with salsa and bake, covered, for 20 minutes.
In a blender, combine avocados, sour cream and green chilies to form a sauce to pour over the top of the burritos.
If you like things spicy, add some sliced jalepenos or hot pepper sauce.
