Bean Soup Recipe
This nine bean soup recipe is not only delicious, it is also super healthy. Packed with fiber from all those beans you will be doing your body good as you warm yourself up with this hearty recipe.
To make this recipe you will first need to create a bean mix, which should include one pound of each of the following:
- barley
- red beans
- pinto beans
- lentils
- black-eyed peas
- black beans
- navy beans
- Great Northern white beans
- split peas
Keep this mix in an air-tight container to use in this, and other soup recipes. This recipe is also perfect for gift giving - simply fill a decorative jar with 2 cups of the bean mix, tie it with a ribbon and include the recipe for the soup.
Nine Bean Soup
Ingredients:
- 2 cups of bean mix
- 2 quarts water
- 1 clove garlic, minced
- 1 lb. diced ham
- 1 large onion, chopped
- 2 16 oz. cans diced tomatoes
- salt & pepper, to taste
Directions:
Soak 2 cups of the bean mix in water for at least one hour, then drain. In a large soup pot, over medium heat, add beans, water, garlic, ham and onion. Cover and simmer for 1½ hours. Add tomatoes and simmer for an additional 30 minutes. Season with salt and pepper.
