Apple Jack Recipe

This apple jack recipe is quick and easy to make. This breakfast is fancy enough to serve when entertaining, but so simple to make that you can feed it to your family any morning of the week.

Ingredients:

  • 1 large baking apple, cored and thinly sliced
  • 2 Tblsp. packed brown sugar
  • ½ tsp. ground cinnamon
  • 4 eggs
  • 2/3 cup milk
  • 2/3 cup flour
  • 2 Tblsp. butter, melted

Directions:

Preheat oven to 350° and spray a 9 inch pie plate with nonstick spray.

In a bowl, combine apples with brown sugar and cinnamon. Toss to coat. Place apples in pie plate and bake 15 minutes. Remove apples from oven and increase the oven temperature to 450 degrees.

Whisk eggs, milk, flour and melted butter in a bowl until well blended. Carefully pour this mixture over the apples and return to the oven for 15 minutes or until golden brown.

Top this delicious apple pancake with any of your favorite toppings: butter, syrup, whipped cream or powdered sugar.
