Organization Tip

Sometimes being organized means giving yourself permission to have "one of those days." We all have days when nothing seems to go quite right, no matter how hard we try. Inevitably those are the same days when you get home and realize that you forgot to defrost something for dinner. Don't worry. Just make sure that you always have some no-prep-required, quick-fix, go-to meals on hand for those times that you are in a pinch. Things like pasta and a jar of your favorite sauce or a healthy, hearty soup mix (I really like Bear Creek soup mixes) are great choices.

Make sure you add these items to your grocery list if you don't already have them on hand. Make a list of your go-to quick-fix meals and keep it with your weekly menu plan so you'll always know what your options are.

Money Saving Tip

Here's a neat little trick that I saw on television and just had to test for myself. I was thrilled to find that it really does work. Did you know that you can rejuvinate scallions by placing the root end in a glass of water? It's true! When you buy scallions to make this month's recipe for Healthy Veggie Dip, don't throw the root ends away. Place them in a glass of water and watch as brand new scallions grow right there on your kitchen counter.

I have had mine going for 2 weeks now. Some of them did get a little wilted when I first placed them in the water, but I just cut off the wilted tops and they have been fine ever since. As a matter of fact, I just cut all of them down to the whites yesterday and today there is already a quarter of an inch of new, green growth.

Give this a try. You will never have to buy scallions again!

Recipe

If you are trying to watch what you eat, whether you want to lose a few pounds or just get better nutrition, you will love this veggie dip recipe. It is much healthier than anything you can buy at the store and, because you make it yourself, you can control what goes in it....no guessing about the nutritional value here!

Healthy Veggie Dip

Ingredients:

  • 1 cup frozen green peas
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup plain Greek yogurt
  • 1 scallion, roughly chopped
  • 1/2 cup fresh dill
  • 2 teaspoons lemon juice
  • 2 teaspoons extra virgin olive oil
  • 1 garlic clove
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
Directions:

Blanch the peas by bringing 1 cup of water to a rolling boil. Add the peas and cook for 3 minutes. Drain and rinse under cold water.

Combine the peas with the remaining ingredients in a food processor or blender and process until smooth. Serve immediately or refrigerate until ready to use.
