A couple of weeks ago I was watching television and the movie Pay it Forward, starring Kevin Spacey, Helen Hunt and Haley Joel Osment was on. Although the movie came out in 2000, I had never seen it. I am glad I took the time to watch it.

If you are not familiar with the concept of paying it forward, it basically boils down to this: whenever possible, make a little extra effort to do something for someone in need of a favor. In return, ask that person to pay it forward to somebody else in need. Eventually, that favor will come back to you in your time of need. It really is a wonderful concept to live by.

Monthly Organization Tip

It's Summer where I live and that means a lot of weekend getaways for my family. All of that packing and unpacking can get tiring. It can also quickly lead to a disorganized mess if I am not careful. If your family is like mine and does a lot of traveling during this time of year, here are a few ways you can make your packing easier and keep your life organized:

  1. Create a travel toiletry set. Purchase a set of travel toiletry bottles and fill them with shampoo, conditioner, cleanser and any other toiletries your family uses on a daily basis. If the toiletry bottle will not hold enough, simply purchase an extra bottle of each item that you use daily. Purchase an extra toothbrush for each family member and an extra tube of toothpaste. Keep your travel toiletry set packed in your toiletry bag and ready to go at all times. This will eliminate the need for you to pack or unpack your toiletries which will save a lot of time. If you have babies or small children you can do the same with a travel diaper bag.
  2. Make a list of necessities that you must always remember when you travel. Things like prescription medications and other items required in your daily life should be included on this list. Keep this list in the front pocket of your travel bag so that you can quickly and easily refer to it each time you travel and know that you will not be forgetting anything.
  3. Unpack as soon as you get home. Even if unpacking simply means dumping the suitcase into the laundry hamper, do it immediately. Place your travel toiletry bag inside your suitcase and store your suitcase somewhere out of the way yet easily accessible so you can get to it when you need it. It would be best to get started on the laundry right away, but if you at least get it into the hamper you will save yourself the frustration of walking over a suitcase for days after you return from a trip.

Recipe of the Month

Tomato Avocado Salad

In the warm weather I like to eat light. This wonderful, light and refreshing salad makes the perfect Summer meal or a great side dish for those of you who like a little more substance at dinner time.

Ingredients:

  • 4 large roma tomatoes, coarsely chopped
  • 1 large avocado, coarsely chopped
  • 1/4 cup crumbled feta cheese
  • salt & pepper, to taste
  • 2 Tblsp. extra virgin olive oil (or to taste)

Directions:

In a salad bowl, combine tomato, avocado and feta cheese. Season with salt & pepper (keep in mind that feta is a salty cheese so go easy on the salt at first and taste until you have the right flavor). Drizzle with extra virgin olive oil and toss gently to combine.

Entertaining Idea

This month host a backyard camp out. This one is especially fun for the kids. Invite some friends to pitch their tents in your backyard. Make a fire, roast some hot dogs, make s'mores and sit around the camp fire telling ghost stories. When it is time for bed everybody can crash in their tents. In the morning make a big pot of scrambled eggs over the camp fire and everybody will go home feeling as though they have spent the night in the woods - without ever having to leave town.
